Description

A quick, easy, and forgiving breakfast frittata that combines fluffy eggs with salty feta cheese and wilted spinach. It’s budget-friendly, makes great leftovers, and is ready in about 30 minutes.


Ingredients

  • 8 large eggs
  • 1/2 cup milk or heavy cream
  • 1 teaspoon kosher salt
  • Black pepper to taste
  • 1 cup crumbled feta cheese
  • 3 cups fresh spinach (or 1 cup frozen, thawed and squeezed dry)
  • 1/2 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter or olive oil
  • Optional: Red pepper flakes, cherry tomatoes, fresh dill or chives

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Dice the onion, mince the garlic, and crumble the feta cheese. If using fresh spinach, wash and dry it; if using frozen, thaw and squeeze out all excess water.
  3. Heat butter or olive oil in a 10-inch oven-safe skillet over medium heat. Add diced onion and cook for 3-4 minutes until soft and translucent.
  4. Add minced garlic and cook for 30 seconds until fragrant. Add fresh spinach and cook for 1 minute until wilted. Remove from heat.
  5. In a mixing bowl, whisk eggs, milk/cream, salt, and pepper vigorously until uniform and slightly frothy.
  6. Pour the egg mixture over the vegetables in the skillet. Sprinkle crumbled feta evenly over the top. Use a spatula to distribute ingredients.
  7. Bake for 15-18 minutes until edges are puffed and golden, and the center is just set with a slight jiggle.
  8. Remove from oven and let rest for 5 minutes before slicing into wedges and serving.

Notes

Ensure frozen spinach is thoroughly squeezed dry to prevent a soggy frittata. Feta is salty, so taste before adding extra salt. Let the frittata rest for 5 minutes after baking to allow it to set properly. It stores well in the fridge for up to 4 days and can be frozen for up to 3 months.
