Ingredients

  • 1 cup (225g) full-fat small-curd cottage cheese
  • 1 cup (150g) cherry or grape tomatoes
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup (75g) fresh mozzarella balls (Bocconcini), halved
  • 1 handful fresh basil, torn
  • 1 teaspoon freshly cracked black pepper
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 avocado, sliced (optional)
  • 1 teaspoon Everything Bagel Seasoning (optional)

Instructions

  1. Wash the cherry tomatoes and remove them from the vine. If using large tomatoes, dice them into small, bite-sized pieces. Set aside.
  2. Add the cottage cheese to a microwave-safe bowl or mug. If using large-curd cheese, stir briefly to break up curds. Pour in the olive oil.
  3. Add the halved fresh mozzarella balls (or shredded mozzarella) on top of the cottage cheese.
  4. Microwave on high for 2 minutes. Check if the cheese is melted and tomatoes are softened. If needed, heat for another 30-60 seconds. Do not overcook.
  5. Remove from microwave carefully. Add sea salt, black pepper, and red pepper flakes if using.
  6. Stir vigorously to combine and melt the cheese further. The mixture should become creamy and sauce-like.
  7. Top with torn fresh basil, sliced avocado, and Everything Bagel Seasoning if desired. Serve immediately.

Notes

Use full-fat cottage cheese for the best creamy texture. Do not over-microwave or the cheese may become rubbery. If the mixture is too dry, add a splash of milk or extra olive oil before heating. This recipe is naturally gluten-free but check labels on processed ingredients.
