  • 1/2 cup (40g) old-fashioned rolled oats
  • 1/2 cup (120g) vanilla Greek yogurt
  • 1 cup (240ml) unsweetened almond milk (or oat/dairy milk)
  • 2 large Medjool dates, pitted
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 scoop vanilla protein powder (optional)
  • 1/2 cup ice
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Prep ingredients: Measure out oats, pumpkin puree, yogurt, and milk. Pit and roughly chop the dates to help the blender process them.
  2. Add ingredients to the blender: Pour in the milk first, followed by Greek yogurt, pumpkin puree, oats, chopped dates, pumpkin pie spice, cinnamon, and vanilla extract. Add protein powder or chia seeds if using.
  3. Blend: Secure the lid and start the blender on low speed to break up the oats and dates. Gradually increase to high speed and blend for 60-90 seconds until completely smooth and creamy. Scrape down sides if needed.
  4. Taste and adjust: Check sweetness and consistency. Add more dates/syrup for sweetness or more milk/ice for texture adjustments.
  5. Serve immediately: Pour into a glass or jar. Garnish with a sprinkle of cinnamon or granola if desired. Drink fresh for best texture.

Notes

For a thicker smoothie, freeze the pumpkin puree beforehand. If using a low-speed blender, soak the oats in the milk for 10 minutes before blending to ensure a smooth texture. Do not use pumpkin pie filling as it contains added sugar and thickeners. Smoothies are best consumed immediately but can be stored in the fridge for up to 24 hours; stir well and add a splash of milk before drinking as oats will absorb liquid.
