Description
A creamy, no-cook breakfast made with chia seeds, Greek yogurt, and honey, topped with fresh berries. This recipe requires only 5 minutes of prep the night before for a stress-free morning.

- 3 ounces (85g) chia seeds
- 1 cup (245g) full-fat plain Greek yogurt
- 1 cup (240ml) milk (whole, almond, oat, or cow’s milk)
- 2–3 tablespoons (30-45ml) honey
- 1 teaspoon (5ml) pure vanilla extract
- 1 cup (150g) mixed berries (strawberries, blueberries, raspberries)
- Optional toppings: granola, sliced almonds, extra honey
Instructions
- In a mason jar or bowl, combine Greek yogurt, milk, honey, and vanilla extract. Whisk until smooth and honey is fully dissolved.
- Stir in chia seeds vigorously for 30-60 seconds to ensure they are separated and coated in liquid.
- Let the mixture sit for 5 minutes, then stir again to break up any clumps that formed.
- Cover the jar or bowl and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
- While the pudding sets, wash and chop the berries.
- Remove pudding from fridge and stir well. If too thick, add a splash of milk. If too thin, add more chia seeds and let sit for 15 minutes.
- Spoon pudding into a bowl or jar, top with fresh berries, and drizzle with extra honey if desired.
Notes
Whisk the chia seeds twice (once when mixing, once after 5 minutes) to prevent clumping. Use full-fat yogurt for the best creamy texture. This recipe can be doubled or tripled for meal prep; store in the fridge for up to 5 days. If using frozen berries, thaw them slightly before adding to avoid icy pudding.
