Instant Pot Beef and Broccoli: Easy GF Weeknight Dinner

Description

A quick, gluten-free, and dairy-free weeknight dinner featuring tender flank steak and crisp-tender broccoli cooked in an Instant Pot with a savory, homemade sauce.


Ingredients

  • 1 lb flank steak, sliced against the grain into thin strips
  • 4 cups broccoli florets
  • 1/4 cup tamari sauce (gluten-free soy sauce)
  • 2 tbsp coconut aminos
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp cornstarch (divided)
  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp sesame oil
  • 1 tbsp neutral oil (for searing)
  • 1/2 cup water

Instructions

  1. Slice the flank steak against the grain into 1/4 inch thick strips. Toss with 1 tablespoon of cornstarch.
  2. Set Instant Pot to ‘Sauté’ on Medium. Add neutral oil and sear beef in a single layer for 2-3 minutes per side until browned. Remove beef and set aside, leaving juices in the pot.
  3. Add tamari, coconut aminos, garlic, ginger, red pepper flakes, and 1/2 cup water to the pot. Scrape up browned bits from the bottom.
  4. Place broccoli florets on top of the beef. Do not stir. Secure lid, set valve to ‘Sealing’, and pressure cook on High for 10 minutes.
  5. Perform a Quick Release. Remove broccoli and set aside.
  6. Whisk remaining 1 tablespoon of cornstarch with 2 tablespoons of cold water to make a slurry. Pour into the pot and stir until sauce thickens (1-2 minutes).
  7. Return beef and broccoli to the pot. Stir to coat in sauce, drizzle with sesame oil, and serve immediately over rice.

Notes

Slice beef against the grain for tenderness. Steam broccoli on top of the beef to prevent mushiness. Ensure the pot is deglazed properly to avoid ‘Burn’ errors. Do not freeze as broccoli texture suffers upon thawing.
