  • 1/2 medium bell pepper, diced
  • 1/4 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • Black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup cooked bacon or ham, crumbled (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Dice the onion, bell pepper, and mince the garlic. If using frozen spinach, thaw and squeeze out all excess water. Crumble any meat if using.
  3. In a large mixing bowl, whisk the eggs, cottage cheese, milk, Italian seasoning, salt, and pepper vigorously until the cottage cheese curds are mostly broken down and the mixture is smooth.
  4. Spread the diced vegetables, spinach, and optional meat evenly across the bottom of the prepared baking dish.
  5. Pour the egg mixture over the vegetables, using a spatula to gently stir and coat everything. Sprinkle the shredded cheddar cheese evenly over the top.
  6. Bake for 20-25 minutes until the edges are set and slightly golden, and the center is just barely jiggly.
  7. Remove from oven and let cool for at least 10 minutes to allow the eggs to set before slicing into squares or triangles.

For the smoothest texture, whisk vigorously to break down cottage cheese curds. If using frozen spinach, it is crucial to squeeze out all water to prevent a soggy bake.
