- 1 pound ground beef (80/20 fat ratio)
- 3 cups broccoli florets
- 1 tablespoon vegetable oil
- 1/3 cup low-sodium soy sauce
- 2 tablespoons oyster sauce
- 1/4 cup chicken broth
- 1 tablespoon dark brown sugar
- 1 teaspoon rice vinegar
- 1 teaspoon cornstarch
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon toasted sesame seeds
- 2 green onions, sliced
Instructions
- Prep ingredients: Chop broccoli into florets, mince garlic, grate ginger, and whisk sauce ingredients (soy sauce, oyster sauce, broth, brown sugar, vinegar, cornstarch) in a small bowl. Set aside.
- Heat vegetable oil in a 12-inch skillet or wok over medium-high heat. Add ground beef and break it up. Cook until browned and no pink remains, about 5 minutes. Drain excess grease if necessary, then remove beef from pan and set aside.
- In the same pan, add broccoli and stir for 1-2 minutes. Add garlic and ginger, cooking for 30 seconds until fragrant.
- Add 2 tablespoons of water to the pan, cover with a lid, and steam broccoli for 2-3 minutes until crisp-tender.
- Return the cooked beef to the pan. Stir the sauce mixture again to dissolve cornstarch, then pour over the beef and broccoli. Toss to combine and cook for 1-2 minutes until the sauce thickens and coats everything.
- Remove from heat. Sprinkle with sesame seeds and green onions. Serve immediately over rice or cauliflower rice.
Notes
Do not crowd the pan to ensure the beef browns rather than steams. Use low-sodium soy sauce to control saltiness. Fresh ginger is preferred over powder for better flavor. The sauce thickens as it cools; add a splash of water when reheating.
