Description
A cozy, one-pan weeknight dinner featuring crispy smoked sausage and caramelized root vegetables like sweet potatoes, carrots, and parsnips. This recipe is budget-friendly, easy to clean up, and perfect for busy families.
Ingredients
Scale
- 1.5 pounds smoked sausage (Andouille or kielbasa), sliced into 1/2-inch rounds
- 2 large sweet potatoes, peeled and cubed into 1-inch pieces
- 1 large red onion, sliced into wedges
- 3 large carrots, peeled and chopped into 2-inch pieces
- 2 medium parsnips, peeled and chopped
- 1 pound Brussels sprouts, halved
- 1 large apple (Granny Smith or Honeycrisp), peeled and diced
- 3 tablespoons extra virgin olive oil
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 2 tablespoons butter, melted (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a large half-sheet pan (18×13 inches) with parchment paper.
- Chop all vegetables and sausage into uniform sizes to ensure even cooking.
- Place all chopped vegetables and sausage on the prepared sheet pan.
- Drizzle with olive oil and sprinkle with dried thyme, garlic powder, smoked paprika, salt, and black pepper.
- Toss everything with your hands or a large spoon until evenly coated with oil and spices.
- Roast in the preheated oven for 35-40 minutes, stirring halfway through to ensure even browning.
- Remove from oven and drizzle with melted butter, tossing gently to coat.
- Taste and adjust salt if needed. Serve hot, optionally garnished with fresh parsley.
Notes
Do not crowd the pan; veggies need space to roast rather than steam. If using a smaller pan, use two pans. Ensure oven is fully preheated. For a vegetarian version, swap sausage for chickpeas or tofu and add extra olive oil. This recipe does not freeze well as vegetables become mushy upon thawing.
