  • 1/2 cup (60g) Chopped Pecans or Walnuts (optional)

Instructions

  1. Spread 1 cup of flour evenly on a microwave-safe plate or baking sheet. Microwave on high for 1-2 minutes, stirring halfway through, until it reaches 160°F (71°C). Let cool completely.
  2. In a medium mixing bowl, combine the cooled heat-treated flour, brown sugar, granulated sugar, and salt. Whisk together to break up lumps.
  3. Add the softened unsalted butter to the dry ingredients. Mix with a fork or hands until the mixture resembles coarse crumbs.
  4. Pour in the heavy cream and vanilla extract. Mix until a cohesive dough forms. If too dry, add more cream; if too sticky, add a sprinkle of flour.
  5. Fold in the semi-sweet chocolate chips (and nuts if using) gently with a spatula or hands. Avoid overmixing to keep chocolate chunks intact.
  6. Roll the dough into 1-inch diameter balls (about 1 tablespoon each). Place on a parchment-lined baking sheet. Yield: 20-24 bites.
