  • 3 lbs sweet potatoes (Garnet or Jewel varieties)
  • 1/3 cup pure maple syrup (divided)
  • 1 cup pecans, chopped
  • 4 tbsp unsalted butter (divided)
  • 1 tsp ground cinnamon (divided)
  • 1/2 tsp sea salt (divided)
  • 1 tsp pure vanilla extract
  • 1 tbsp flour (optional, for binding topping)
  • Flaky sea salt (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes, prick with a fork, and roast directly on the rack or on a parchment-lined sheet for 40-50 minutes until soft.
  2. Let potatoes cool for 10 minutes, then cut in half and scoop flesh into a large bowl, discarding skins.
  3. Add 1 tbsp melted butter, 1/3 cup maple syrup, vanilla extract, 1 tsp cinnamon, and fine sea salt to the potatoes. Mash with a fork until smooth but slightly chunky. Adjust seasoning to taste.
  4. In a small bowl, combine chopped pecans, optional flour, 1 tsp cinnamon, 1/4 cup maple syrup, and 2 tbsp melted butter. Mix until pecans are coated.
  5. Spread the mashed sweet potatoes into a 9×13 inch baking dish. Sprinkle the pecan mixture evenly over the top.
  6. Bake at 375°F (190°C) for 20 minutes, or until the topping is golden brown and fragrant.
  7. Remove from oven and let cool for 10 minutes to allow the topping to set. Sprinkle with flaky sea salt if desired before serving warm.

Notes

Roasting the sweet potatoes concentrates their flavor compared to boiling. If the topping becomes too dark, cover with foil. For a dairy-free version, substitute butter with coconut oil or olive oil. The casserole can be assembled ahead of time and refrigerated before baking.
