- 3 tbsp honey (plus extra for drizzling)
- 2 tbsp fresh thyme leaves, chopped
- 6 oz pre-sliced prosciutto
- 8 oz hard cheese (Smoked Gouda or Sharp Cheddar)
- 1 box crackers (approx. 12 oz, mix of seeded and plain)
- 1 pint fresh figs or red grapes
- 1/2 cup walnuts or pecans (toasted)
- 2 medium apples (Honeycrisp or Fuji), sliced
Instructions
- Whip the ricotta: In a mixing bowl, combine ricotta, honey, and chopped thyme. Beat with an electric mixer or whisk vigorously with a fork until smooth and fluffy (about 2-3 minutes). Taste and adjust honey if needed. Set aside.
- Prep fruits and nuts: Wash and dry grapes. Slice apples (toss with lemon juice if not serving immediately). Trim fig stems. Toast nuts if not pre-toasted and let cool.
- Place anchor items: Place the bowl of whipped ricotta in the center or slightly off-center of the board. Cluster hard cheese cubes (3-4 per pile) around the board. Place crackers in groups, leaving negative space between them.
- Add meats and fruits: Fold prosciutto into loose rosettes and place near cheese/crackers. Cluster grapes and figs in gaps. Lean apple slices against cheese or crackers. Scatter toasted nuts loosely over the board.
- Final touch: Drizzle extra honey over the ricotta and figs. Sprinkle with flaky sea salt. Adjust arrangement for balance.
Notes
Let cheese sit at room temperature for 30 minutes before serving for better flavor. Use the ‘Rule of Odds’ (groups of 3 or 5) for visual appeal. Do not overcrowd the board; leave negative space. Apples can be kept in water or tossed with lemon juice to prevent browning.
