  • 2 tbsp (30ml) honey
  • 1 tbsp (15ml) sriracha
  • 3 cloves garlic, minced
  • 1 tsp ground ginger
  • 1 tsp neutral oil (e.g., avocado oil)
  • 1 tbsp toasted sesame seeds (for garnish)

Instructions

  1. Pat pork belly cubes completely dry with paper towels and place in a large bowl.
  2. In a small bowl, whisk together soy sauce, minced garlic, ground ginger, and neutral oil. Pour over pork and toss to coat. Let marinate for 10 minutes.
  3. While pork marinates, mix the glaze ingredients: honey, sriracha, and 1 tsp water.
  4. Preheat air fryer to 380°F (190°C). Arrange pork cubes in a single layer in the basket without overcrowding.
  5. Cook for 10 minutes to render the fat. Shake the basket to redistribute pieces.
  6. Increase air fryer temperature to 400°F (200°C). Cook for another 8 minutes until golden brown and crispy.
  7. Remove basket and brush the honey-sriracha glaze over the hot pork bites.
  8. Return to air fryer for 2 minutes to caramelize the glaze until tacky and shiny.
  9. Garnish with toasted sesame seeds and serve immediately.

The key to this recipe is the two-stage cooking process: render fat at a lower temperature (380°F) first, then blast with high heat (400°F) to crisp. Do not skip drying the pork, as moisture prevents crispiness. Add the glaze at the very end to prevent burning the honey. Leftovers can be stored in the fridge for up to 3 days and reheated in the air fryer at 375°F for 3-4 minutes.
