Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan and line with parchment paper.
- In a medium bowl, combine 1 cup GF flour, 1 cup brown sugar, 2 teaspoons cinnamon, and 1/2 teaspoon salt. Cut in 1/2 cup cold cubed butter until mixture resembles coarse crumbs. Set aside.
- In a large bowl, whisk together 2 cups GF flour, 2 teaspoons baking powder, and 1/2 teaspoon salt.
- In a separate large bowl, beat 1 cup softened butter and 1 cup granulated sugar until light and fluffy (2-3 minutes).
- Beat in 3 eggs one at a time, then add 1 teaspoon vanilla extract. Mix until combined.
- Alternate adding dry ingredients and milk to the butter mixture, starting and ending with dry ingredients. Mix until just combined.
- Pour batter into prepared pan and spread evenly. Sprinkle streusel topping over the batter and press gently to adhere.
- Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then lift out using parchment overhang and transfer to a wire rack to cool completely.
Notes
Ensure baking powder is fresh for proper rise. Use room temperature eggs and milk for a smoother batter. Do not overmix the batter to avoid a dense texture. For the streusel, keep butter cold to ensure a crunchy topping. This cake freezes well for up to 3 months.
