  • 1/2 cup Unsalted Butter (cold, cubed, for streusel)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan and line with parchment paper.
  2. In a medium bowl, combine 1 cup GF flour, 1 cup brown sugar, 2 teaspoons cinnamon, and 1/2 teaspoon salt. Cut in 1/2 cup cold cubed butter until mixture resembles coarse crumbs. Set aside.
  3. In a large bowl, whisk together 2 cups GF flour, 2 teaspoons baking powder, and 1/2 teaspoon salt.
  4. In a separate large bowl, beat 1 cup softened butter and 1 cup granulated sugar until light and fluffy (2-3 minutes).
  5. Beat in 3 eggs one at a time, then add 1 teaspoon vanilla extract. Mix until combined.
  6. Alternate adding dry ingredients and milk to the butter mixture, starting and ending with dry ingredients. Mix until just combined.
  7. Pour batter into prepared pan and spread evenly. Sprinkle streusel topping over the batter and press gently to adhere.
  8. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in pan for 10 minutes, then lift out using parchment overhang and transfer to a wire rack to cool completely.

Notes

Ensure baking powder is fresh for proper rise. Use room temperature eggs and milk for a smoother batter. Do not overmix the batter to avoid a dense texture. For the streusel, keep butter cold to ensure a crunchy topping. This cake freezes well for up to 3 months.
