Ingredients
- 1 large head romaine lettuce, chopped into 1/2-inch pieces
- 4 ounces hard salami, sliced thin and cut into small pieces
- 4 ounces sharp provolone cheese, cubed
- 1 medium English cucumber, diced
- 1/2 medium red onion, finely diced
- 1/2 cup Kalamata olives, pitted and halved
- 1 cup cherry tomatoes, halved
- 1/3 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- Wash and dry the romaine lettuce thoroughly, then chop into bite-sized pieces (about 1/2 inch). Transfer to a large mixing bowl.
- Dice the cucumber and red onion, and halve the cherry tomatoes. Add them to the bowl with the lettuce.
- Cut the salami into small pieces, cube the provolone cheese, and halve the Kalamata olives. Add all proteins and cheese to the bowl.
- In a small jar with a lid, combine the olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper.
- Screw the lid on tight and shake vigorously for 30 seconds until the dressing is emulsified.
- Pour about half of the dressing over the salad and toss gently but thoroughly with tongs until coated.
- Add remaining dressing as needed, taste, and adjust seasoning. Serve immediately.
Notes
Chop all ingredients uniformly for consistent bites. Do not dress the salad too early to prevent wilting; toss right before serving. If meal prepping, store veggies and dressing separately.
