Description

An easy, stress-free breakfast casserole featuring a creamy egg and ham filling topped with buttery, flaky crescent roll dough. Perfect for brunches, holidays, or lazy weekends.


Ingredients

  • 8 large eggs, room temperature
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup diced ham
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 1 tube (275g) crescent roll dough
  • 1/2 cup extra cheddar cheese (optional)
  • 2 tablespoons chopped chives or green onions (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Melt 2 tablespoons of butter in a skillet over medium heat. Add diced onion and cook for 3-4 minutes until soft and translucent.
  3. Add minced garlic to the skillet and cook for 1 minute until fragrant. Transfer the onion and garlic mixture to a large bowl and let cool slightly.
  4. Crack eggs into the bowl with the onions. Add heavy cream, salt, and pepper. Whisk vigorously until uniform and slightly frothy.
  5. Stir in the diced ham and 2 cups of shredded cheddar cheese.
  6. Pour the egg mixture into the prepared baking dish and spread evenly.
  7. Unroll the crescent dough and tear or cut into strips/squares. Lay pieces over the egg mixture to cover completely, overlapping slightly if needed.
  8. Brush the top with melted butter (optional) and sprinkle with extra cheese if desired.
  9. Bake for 30-35 minutes until the topping is golden brown and the center is set.
  10. Let the casserole rest for 5-10 minutes before cutting and serving.

Notes

Let the casserole rest for 10 minutes after baking to allow eggs to set. Sautéing onions first prevents a watery texture. For make-ahead, assemble the night before and refrigerate; add 5-10 minutes to baking time if cold. Do not freeze as eggs become rubbery and dough gets soggy.
